Don't throw away those pumpkin seeds!

Roasted pumpkin seeds are an easy, healthy snack you and your family will surly love. Did you know, these seeds are high in protein and fiber, and they are a good source of minerals like zinc and iron? You can make them with just about any toppings, but there are a few steps to take to make sure that your new favorite snacks are the best!
GETTING STARTED:
  1. When you are ready to start roasting your pumpkin seeds, make sure your oven is preheated to 300ºF.
  2. Line a large sheet pan with aluminum foil (to make them crispier) or parchment paper and lightly grease it with butter, cooking spray or oil. This will reduce cleanup later.
  3. After scooping out the seeds from the pumpkin and placing them in a bowl, you will need to separate the seeds from the "guts" or pulp. This makes a great activity for kids, giving them a chance to not only help, but to play in the slimy gunk! If you are having a hard time getting those pesky string things off, put your seeds in a colander and run them under cold water. Also, don't worry about getting every little piece off the seeds...Just do the best you can!
  4. After removing the gunk, there are a few different methods you can do to rinse your seeds:
    1. Some people swear by boiling your seeds for a few minutes. Then they take them out and place them on paper towels to dry.
    2. Some people say to soak them in salt water
    3. The easiest thing to do is just to rinse them under cold running water!
  5. On to drying out your seeds. This is an important step! If there is too much water left on your seeds, it will cause moisture to build up in your oven. The extra moisture will not allow your seeds to be as crunchy as they should be! The seasonings you choose to use, will also stick better to a dryer seed. There are a few different ways you can do this.
    1. Lay out some paper towels, and place your rinsed seeds on to them in a single layer. Don't try patting them to dry, they will more than likely stick to the paper towels. Leave over night.
    2. You can just put them on a kitchen towel and pat them dry.
  6. Next, it's time to season your seeds! Whichever flavors you choose, combine your seasonings with melted butter or oil in a small bowl. Then drizzle the mix over the dry seeds in a medium-sized bowl. Stir the mixture to make sure each seed is coated. Here are some combinations you should try out:
    1. Taco seasoning
    2.  Salt and pepper
    3. Powdered ranch mix
    4. Cinnamon and sugar
    5. Garlic powder and seasoning salt
  7. Spread the seeds out on to your prepared sheet pan in a single layer.
  8. Roast for 45 minutes to 1 hour and 15 minutes, stirring occasionally.

Any kind of dehydrated or oven-dried fruit makes for a tasty, healthy treat, but in our "un-biased" opinion, dehydrated or oven-dried strawberries are the best.
