Homemade Pumpkin Pie (using real pumpkins)

An easy (yes we said easy) way to make the perfect pumpkin pie using REAL pumpkins!

A few tips before you get started:
  • Roast your pumpkin until it’s very tender. This will make the filling silky & smooth. 
  • Let the pumpkin cool before combining the rest of the ingredients in your food processor or mixer after roasting. If you don't. the hot pumpkin could cook the eggs when combined. 
  • Always bake your pie on the bottom rack of your oven! This is so the bottom of the pie won't get soggy. 
Ingredients:
  • At least a 2lb pumpkin (of almost any variety) halved with the seeds removed
  • 1 tablespoon of olive oil
  • 2 large eggs
  • 1/2 cup of heavy whipping cream
  • 1/4 cup of packed brown sugar
  • 1/4 cup of granulated sugar
  • 1 teaspoon of pure vanilla
  • 2 teaspoons (or a dash more) of pumpkin spice or you can combine the spices below
    • 1 teaspoon of ground cinnamon 
    • 1/4 teaspoon of ground ginger
    • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of kosher salt
  • 1 par-baked 9" pie shell or you can even use a graham cracker crust
  • Optional: Whipped cream for serving 
Directions:
  • Preheat oven to 400°F
  • Drizzle cut side of pumpkin with olive oil, then place cut side down on a rimmed baking sheet. Bake until tender when pierced with a sharp knife, 30 to 35 minutes. Let cool.
  • Reduce oven to 350°F
  • When cooled, scoop pumpkin flesh into a food processor or lender and process until smooth.
  • Add eggs, cream, brown sugar, granulated sugar, vanilla, cinnamon, ginger, nutmeg, (or pumpkin spice in place of those 3) & salt and process until smooth, scraping down sides of bowl to make sure ingredients are evenly blended together.
  • Pour your pumpkin mixture into par-baked pie shell or graham cracker crust & smooth top.
  • Bake on the bottom rack of the oven until center is firm to the touch, usually 45 to 50 minutes. Let cool completely.
  • Optional: Top with whipped cream before serving.

Any kind of dehydrated or oven-dried fruit makes for a tasty, healthy treat, but in our "un-biased" opinion, dehydrated or oven-dried strawberries are the best. Keep in mind, the more flavorful the fruit, the better your results will be.
